For those of you who follow me on Twitter or are connected on Facebook, you may know that I’ve been making some big shifts in my eating and exercise habits. These have been big changes but my love of food and of cooking have helped me stay on course.
In this brief video I show you how to create a veggie egg white fritatta. If you’re not familiar with the term “frittata” it’s just a fancy word for an omelet that has not been folded over. This frittata makes a great breakfast meal because it is packed with protein and also has some good veggies in it. This is great fuel for your morning.
A few notes:
* I used grape seed oil in the pan
* I sprinkled cayenne pepper on it for some extra zip and for the healthy benefits.
* I used some shredded mozzarella to top the frittata. Mozzarella also provides protein and is not as fatty as other creamier cheeses.
